Yum! One of my favorite dishes is calabacitas. My grandmother always made this, and when we had it on Thanksgiving I was in heaven. How better to get your corn to stay on the fork? Use some mashed taters and gravy as glue! ha ha
We mix zucchini, corn and diced onion, a little garlic and oil. Divine! You can also add cheese, or chili peppers, tomato or any other veggie’s you may have on hand. Your fresh art made me hungry 🙂
